The Briscola evokes the traditional card game popular in the old inns now in danger of extinction. Society changes and Antonio Carpenedo wanted to dedicate this cheese to that world that fades like in an old photograph and that must be kept and remembered. The interpretation is certainly different, but Briscola pays homage to the dairy tradition with wine, so often sipped between one game of cards and another. It is part of the culture of the whole of Italy, not just of the Veneto. Antonio Carpenedo's UBRIACO® method is also a way to preserve traditions.
VIEW: The wine color of the rind covered by the marc used for intoxication is striking. The yellow paste is dotted with small, irregularly shaped partridge eyes.
TOUCH: Semi-hard consistency, tending to break, excellent for being "broken" into irregular portions.
SMELL: The vinous notes immediately stand out, accentuated by the presence of marc. In perfect balance with the spicy part, which surprises with a hint of pepper. Fruity hints from which cherry emerges.
WANT: Briscola is tasty, slightly spicy, with notes of buttermilk and forage. We rediscover the delicacy of fruity and spicy vinous notes. Real cheese, sincere and to be consumed in company with a glass of structured red wine.
Ingrediants: Cow's MILK *, lactic ferments, salt, rennet, "Raboso DOC" * wine (min. 0.1%) and crushed grapes * (min. 0.1%) in rind.
