Since 1980, Antonio Carpenedo began his research to create a truffle cheese that was different from everything that already exists. Insights often appear when you least expect them. An evening with Giorgio Onesti, historical collaborator and friend of Antonio, the pretext for the truffle! Giorgio, a profound connoisseur of Italy and its excellences, suggests the combination!

Nothing better for Antonio, who begins to think and experiment. The result is an extraordinary success, enriched by the massage of spices and the touch of ash. Yup! This extraordinary example of creativity ends under ashes, to preserve and enhance its aromas.

VIEW: The gray color of the ash dominates the crust, giving it a delicate appearance. When cut, you can appreciate a thin gray line, of the ash, a line given by the spices and then the light yellow of the paste dotted with truffles.

TOUCH: Soft, smooth, elegant. To the touch Perlagrigia strikes for its elegance and elasticity. The very fine and impalpable ash creates a velvety, very pleasant effect. Defined by many as "fun".

SMELL: A 360 ° sensory experience. Truffle prevails first of all, wisely dosed, to then leave room for the mix of spices with which the Perlagrigia is massaged with a prevalence of cinnamon. Hints of milk and butter.

WANT: Surprising for its elegance, never invasive and with a pleasant aftertaste. Antonio Carpenedo managed to create the right balance between truffles, spices and milk. The truffle does not surprisingly cover the other flavors, without losing
its protagonism.

 Ingrediants: Pasteurized cow's MILK, truffle (min.0.3%), salt, rennet, lactic ferments. Spice blend crust: cinnamon, cloves, ginger, nutmeg, cardamom, coriander (min.0.1%) and ash (min.0.1%).
