VIEW: Splendid fusion between the marc of the rind and the red of the cranberries. It has the appearance of a high pastry dessert. When cut, you can appreciate the fine and widespread marbling of green, ocean blue, which runs through the cream-colored paste.
TOUCH: Soft, tending to creamy on the surface with the warmth of the skin, it amazes with the soft consistency of the marbled paste thanks to the action of the wine. The rind in contact with the wine takes on a decisive weight and breaks sharply into portions with jagged edges.
SMELL: The symphony of perfumes touches the strings of our senses, surprising for the harmony of the marbling that changes to sweet. The scent of cherry and dried fruit goes well with the vinous notes in the crust.
TASTE: The end of this journey is the mouth. It cremates and invades the palate with marbled notes that are never pungent, pleasant and in perfect balance with the sweetness of the vinous notes of the Passito di Raboso. In purity or in contrast to the acidity of cranberries, in fondue with onion croutons, on top of meat or in risotto, it has no boundaries.

The cheese Drunk of Raboso it is the first creation of Antonio Carpenedo among his Cellar Cheeses dated as far back as 1976 and which gave rise to the Ubriaco brand. A success more than 40 years old during which experimentation and compromise with thehigh quality.
L'Ubriaco di Raboso is a cow's milk cheese and has a crust that takes on the classic burgundy color, testimony of the careful method of intoxication that transforms the pasta into a deep yellow with rare and small holes.
At the table it goes perfectly with polenta, a crunchy piece of bread it's a medium structured red wine. Excellent with del Red radish of Treviso, a combination of a unique territory.
The Ubriaco di Raboso cheese gives fruity notes of wild blackberry and morello cherry. The vinous notes are delicate and persistent, wrapped in a delicate but decisive slightly spicy taste.

As Antonio Carpenedo says, cheese always starts with an idea. Blugins was born on the occasion of Antonio's 50th anniversary of activity. The family thinks of an original idea: to combine cheeses with cocktails and thanks also to the collaboration with a great Treviso bartender, specific cocktails were created for the occasion to match our creations.
From this path of strong innovation and research, the Carpenedo family decides to share this project with Roberto Marton and his prestigious Gin.
After two years of testing, in 2017, the right T.U.T.A was finally found. And here is an intriguing blue cheese made from cow's milk that perfectly marries one of the most loved spirits in the world.
The Blugins name crowns a product that aims at contemporaneity and innovation of taste. Gin and cheese are not only a perfect combination from a sensorial and gastronomic point of view, they also represent the fusion of cultures, stories and passions that tell the desire for pleasure and beauty. Blugins is dedicated to those who do not like banality, to those who love to dare at the table and in life.
VIEW: Blugins is wrapped in an ingenious package that incorporates an original fabric pocket. The pearly white of the shape is enriched with small flakes of spices used for the distillation of gin. When cut, you can appreciate the compactness and homogeneity of the marbling and the particular creaminess of the paste.
TOUCH: The paste is compact and at the same time delicately creamy. The grain does not form a drop like in the most common blue cheeses but remains impalpable and delicately melted into the paste, thanks to the action of the Gin.
SMELL: A fragrant, slightly alcoholic, sweet, elegant, fine and decidedly intriguing creation. Sensations of aromatic fine herbs and flowery pleasures blend pleasantly with the scented essence of the blue cream.

Antonio Carpenedo is fascinated by spices, their aromas and their origins. This small seed contained in a red berry is native to southern India and grown in tropical areas.
The fresh cheese is properly seasoned and at the perfect moment it is sealed in oak barrels with a mix of pepper that remains jealously guarded. The barrels thus filled follow a precise rotation program to allow a perfect transformation and transfer of flavors.
VIEW: Cylindrical in shape, slightly irregular, the rind is dark in color and rough in appearance given by the massive presence of chopped pepper. In the paste it has a straw yellow color and slightly eyes.
TOUCH: Very particular to the touch in the crust due to the presence of chopped pepper. The paste is semi-hard and has a compact consistency. Excellent flake predisposition.
