The name Basajo® was born in this way, from the exclamation of the little niece of Antonio Carpenedo and daughter of Ernesto. Sincere, bluntly, pure, direct. Basajo® does not compromise and offers an experience for palates who are careful to grasp the innumerable facets contained in this cheese, the result of the skilled hands, of Ernesto's intuitions and of Antonio's severe judgment. Being able to perfectly combine the strength of sheep's milk and the sweetness of white passito wine is the result of two generations of master processors, capable of giving emotions for the palate and for the mind.

VIEW: One glance is enough to be delighted. The whiteness of the paste contrasts perfectly with the rich green / blue marbling. Embellished with Chilean rinded grapes that give green and yellow chromatic notes, it surprises with its brightness.

TOUCH: Pleasant to the touch and with a soft texture tending to creamy, it invites you to taste and lick your fingers.

SMELL: Fantastic olfactory experience prelude to intense emotions. The scents of raw sheep's milk wisely balance the sweetness of the marc and white passito wine.

WANT: The exceptional melt-away nature of Basajo® melts immediately in the mouth, giving pleasant sensations of contrast between the strong flavor of sheep's milk and the sugary aftertaste of raisin wine. Pure, with Chilean grapes, with delicate red onion sauces, in vegetable soups, as an appetizer or at the end of a meal paired with white passito wines.
